I love egg bakes. To me they are a cross between a scramble, quiche, diner food and fancy food all in one. All of my favorite things... Comfort food!
And the best part is how easy it is to change them up to your liking, or to use what you have in the fridge!
This is especially a great dish for company, as it can be assembled the night before, refrigerated and baked off in the morning! more
Simple Spicy Sausage Egg Bake Recipe
Ingredients:
1/2 cup melted butter, divided
1/2 cup flour
12 eggs
2 cups sausage, cooked & cooled
2 cups small curd cottage cheese
1 teaspoon baking powder
4 cups shredded pepper jack cheese
Tabasco sauce, to taste
8oz frozen chopped spinach, thawed
1 (4oz) can diced green chiles
1/2 teaspoon onion powder
1/2 teaspoon cumin
1 teaspoon chipotle chili powder
salt & pepper, to taste
Directions:
Preheat your oven to 400 degrees F. Pour 1/4 cup of the melted butter into the bottom of a 9x13" baking dish.
In a large bowl, beat the eggs and stir in all the rest of the ingredients, mixing well. Pour into your prepared pan and bake for 20 minutes at 400 degrees.
Reduce the oven to 350 degrees and finish baking for an additional 30 minutes, until the egg bake is puffed and golden brown on top.
