cardamom-vanilla shortbread cookies

These Scandinavian-inspired cardamom-vanilla shortbread cookies are so warm and cozy.

They taste a bit like Christmas in your mouth...  especially for those of us from Scandinavian descent!

Wanna know the best part about these delectable little treats?

They take all of 5 minutes to get into the oven!  Now, who doesn't love that?!

I needed to bake today.  I am celebrating, and for me...  celebrating = baking.

But, I'm also tired.  And even though my dreams and plans are grand at the moment, my comfy chair and book are calling my name loudly.

These simple shortbread cookies were my happy compromise!


I got to whip up some yummy, super-easy delicious cookies for my freezer (ok, ok...  I may have eaten a few...) and I also got to rest and enjoy my book during naptime.  It's a win-win!

Shortbread is a super easy treat to make.  Very few ingredients.  Very little time.  They are buttery, melt-in-your-mouth... best dipped in a cup of hot coffee (or cider)!

Try these next time you need a quick fix...  or someone calls and says they're coming over in a half an hour and your cupboards are bare...  or you are celebrating!

Cardamom-Vanilla Shortbread Cookies Recipe
adapted from Land O Lakes
makes app. 48 small triangle cookies

Ingredients:
1 cup butter, room temperature
1/2 cup sugar
1 teaspoon pure vanilla extract
pinch of salt
2 1/2 cups flour
2 teaspoons ground cardamom

Directions:
Preheat the oven to 350ºF.  Line a 9x13" baking dish with parchment paper.  Set aside.

In a large mixer bowl, cream together the butter, sugar, vanilla & salt at medium speed until light and fluffy.

Mix in the flour and cardamom on low, until the mixture resembles coarse crumbs.

Press the mixture evenly into the lined-baking dish.  For prettier cookies when they are done:  Score the bars however you would like to serve them.  (Scoring is cutting part-way through, where you will later cut all the way through).  This makes it easier to not have a crumbly mess at the end!

Bake for 20-25 minutes, until the edges are light golden brown.  Cool completely before cutting.
